Gluten Free News Round-Up: November 20th-26th

Thanksgiving weekend is always crazy for me so I didn’t have much time this week to pull together the news articles I had read through out the week. Here are the top two I saw for this week though, have a good week and I hope you had a healthy and happy holiday! 

Risk of Fracture in Celiac Disease: Gender, Dietary Compliance or Both?
This Argentinian study looked at individuals with CD who had been diagnosed with CD for at least five years and screened them for bone breakage and fracture. The interesting findings suggested that men are more at risk of injury than females, yet adhering to a gluten free diet after diagnosis helps decrease this risk. Their reasoning: “eliminating gluten may reduce the risk of fractures in celiac patients not necessarily by increasing bone mass and mineral density, but by improving body mass and fat/ muscle composition, nutritional status, and bone architecture.”


US Foods Helps Colleges meet Increasing Student Demand for Healthy and Gluten Free Foods
US Foods is a food service company that provides meals and food to colleges and universities. In a recent educational forum they provided information to colleges and university dining hall staff regarding how to improve the gluten free options for students. They have seen a 200% increased in demand for these products since starting to offer a gf line in 2009. Props to them for making the lives of the gluten free college student much easier!
