With the holiday season catching up to us quickly it’s good to have information available to us to help lessen the stress of the holidays, especially with the compounding stressors of having a gluten free holiday. Celiac Disease and VitaminD & K-Levels Influence Bone Mineral Density in Children and Teens
Undiagnosed CD, or not following a gluten free regime, has previously been linked to showing decreased levels of Vitamins D and K. This recent study shows this trend in Children and Teens, finding that these decreased levels lead to bone density difficulties in this population prior to diagnosis and for one year after making the gluten free transition. Finding such as this suggest that a treatment regime that provides Vitamin D and K may be beneficial to children and teens with Celiac Disease. 


Is Gluten Free Trend The New Way to Lose Weight?
This article, posted on the Fox New’s latino site, explains how a gluten free diet should not be used as a fad diet to loose weight, without careful considerations to what we are replacing gluten with in our diet. One quote says: “Unless someone is diagnosed with celiac disease or gluten intolerance by a physician or discovers through a food-elimination diet that they feel better without gluten, there is no good reason to avoid it,” says Carol Fenster, author of 125 Gluten-Free Vegetarian Recipes (2011). The bottom line? Be healthy and eat a well balanced diet no matter what, while also being creative!

Healthy School Lunches not Adding Up
It’s not entirely gluten free related, but it is nutrition related and related to my current graduate school field placement. New regulations under the Healthy, Hunger-Free Kids Act of 2010 go into effect in 2012-2013 and are requiring  that school lunches meet new requirements that drastically change what schools will be offering. This article describes several schools that are already trying to implement changes and the toils these changes are having on schools financially. While this is great to combat the 1/3 obesity rate of our children, it leaves many schools running in deficit because prices are higher and there is no financial coverage for making improvements to meet these regulations.  Some sort of financial incentive would be helpful to make these changes more possible, thus allowing more schools to meet regulations!
