Is Gluten a Friend or a Foe?
Another artcile weighing the pros and cons of a gluten free diet. I still wonder if there is any real benefit of this diet for people who don’t need to be gluten free. Yes I feel healthier overall, but I need to take such care and time to make sure I am not glutened! I don’t think I would do this diet if I didn’t have to.

Gluten Free Bread Scam Causes Dozens to become Ill
This is DISGUSTING to me. A man falsely sold regular loaves of bread in new packaging as part of his ‘gluten free’ business in North Carolina. I find is disgusting when individuals play with other people’s health and livelihood for profit in anyway. How awful. The sad thing is I am sure this has happened before and will happen again.

Screening Study Shows Celiac Disease Rate is Higher Than Expected
This study showed that in some populations that were screened for celiac disease many patients a asymptomatic and more have CD than previously expected. That being said, often wonder why Celiac Disease is not screened for in the United States at birth as it is in other countries. I would assume that our capitalist and profit driven health system is to blame. The system on a whole can make far more money by not diagnosing early via numerous doctors visits, misdiagnoses that need medication or surgeries etc. etc. What a pity.

Complex Origins of Food Safety Laws
This is an older article not entirely associated with the gluten free life style but still relevant. The laws we have in the United States, as some of us know, in regards to cooking our foods may in fact be making our food less nutritious and healthy. This article is long but well worth the read!
