Gluten Free News Round-Up: February 3rd-9th

A Therapeutic Pill for Celiac Disease and Gluten Intolerance?
Researchers from the University of California at Davis and the University of Washington have discovered a naturally occurring enzyme that breaks down gluten to a non damaging level in those without Celiac Disease and Gluten Intolerance, but not for those with the conditions. This article discusses that using this enzyme these researchers have conceptualized a potential new enzyme that could be made into a pill to help further break down gluten. Interesting idea, huh?

No Link Between Celiac Disease and Gluten Laden Wheat
This brief article discusses a recent article published in the Journal of Agriculture and Food Chemistry which looked at the hypothesis that the rise in CD rates is associated with higher rates of gluten in newer strains of agricultural wheat. The study suggests that  rates of gluten in wheat have not risen significantly since the 1920’s, and that the hypothesis is incorrect. However, they did find that more gluten is being eaten overall, likely due to the use of Vital Gluten used in many products.
