Potluck Dinner Club: Rainbow Potluck (with bonus Corn Salsa Recipe)

September’s potluck theme was based on the colors of the rainbow. Each attendee had to choose a main color for their dish, and no two attendees could have the same color until we’d fulfilled the rainbow. The result was a scrumptious hodge podge of dishes across the entire spectrum. Some things were naturally those colors (such as beet soup for violet) while others were dyed that color (such as a Star Wars Blue Milk remake). Here’s what we had:

RED– Greek style shrimp

ORANGE– Orange soda and chicken tikka masala

GREEN- Sage cheese, spinach and feta bake

BLUE- Star Wars blue milk and blue colored vegetable dip

INDIGO- ‘Blue corn chips’ which were really more indigo

VIOLET- Beet Soup

BROWN- Gluten Free brownies and egg sashimi

PINK- Pink lemonade

WHITE- Rice

BLACK AND WHITE- Non gluten free oreos

This theme gave us the opportunity to have three courses, something that is often lacking at these get togethers because of the themes. But what was even more fun was the crafts. This potluck was hosted by a teacher friend who purchased us finger pants to play with, so just for a moment we felt like kids again!

Out of any dish the corn salsa stood out to   everyone as one of the stars of the night. Here’s the recipe just for you:

Ingredients
  • 1 can of canned cut kernel corn
  • 1 can of creamed sweet corn (accidental addition)
  • 2 pickled canned jalapeño peppers, discard seeds, chopped
  • 1 red onion, chopped
  • 1 orange pepper, chopped
  • 1 whole lime - squeeze the juice out and use all that juice
  • 2-3 Tbsp or so of fresh chopped cilantro
  • Salt and Pepper to taste
  • Mrs Dash salt-free Fiesta Lime seasoning to taste (I substituted this seasoning for the dried red pepper in the recipe, but I liked the added flavor of the chili powder that was in the seasoning.)
Instructions
  1. Prepare the ingredients.
  2. Mix ingredients together in a large bowl and chill until ready to serve

  1. What a fun theme for a potluck! I might have to steal this rainbow theme sometime 🙂 Love that you used creamed corn in the recipe – very intriguing.
