Potluck Dinner Club: Gluten Free Potluck with Bonus Beet Summer Salad Recipe

Beet Summer SaladCan you believe we’ve never done a gluten free potluck? We’ve done different nationalities, different ingredients; even colors. While gluten free has always been available at all of these we’d never done gluten free specifically, so we made it our June theme. Unfortunately summer calls for busy weekends and strained schedules, so it was one of the smaller ones. That’s didn’t halt the deliciousness though. We filled our bellies on homemade mango salsa with chips, chilled sesame noodles, watermelon gazpacho, Mogol curry, and a beet salad inspired by a local restaurant. Later on we made marshmallows over the bonfire for gluten free graham cracker s’mores. It was the perfect summer night.

This beet salad, though; it holds so many date night memories. Mike and I eat at this restaurant, New York Panini, frequently and this is always his go to meal at the restaurant. It is a perfect reminder to give yourselves those lazy nights in the rush of summer, or any season. He’s recreated it here just for you:

This refreshing salad is packed full of flavor, and is the perfect use for beets!

Serves: 6 side salads
Ingredients
  • ⅓ cup Walnuts
  • 6 cups Water
  • 3 medium Beets
  • 1 cup Fresh Corn kernels (1 12oz can drained sweet corn works as well)
  • 10-12oz Field Greens
  • 8oz Crumbled Goat Cheese
  • 3 medium Vine Ripe Tomatoes diced
  • 6oz Honey Mustard Salad dressing
Instructions
  1. Pre-heat oven to 350º.
  2. Chop the walnuts and place on baking sheet then bake for 10 minutes.
  3. Meanwhile bring 6 cups water to a boil in a medium sauce pan. Once water is boiling add beets and simmer for 15 minutes.
  4. Drain beats peal and dice into ¼th inch cubes.
  5. Heat olive oil in a small pan, add corn roast for 3-4 minutes until olive oil is evaporated.
  6. In a large salad bowl toss field greens, beets, corn, tomatoes and honey mustard dressing. Top with goat cheese and roasted walnuts.
  7. Enjoy!
  8. *Alternatively you can use canned beets instead of fresh but the taste will not be as vibrant.
