Chocolate Therapy: Glutino Style

It’s been a rough two weeks. My dad was sent to the hospital with heart problems, and was in for a week. He’s out now, but currently being monitored to see if he will need a pace maker. Cooking has always been my ‘therapy’ so I’ve been doing a lot of it lately. At one of the highest stress points during the past two weeks I spent an entire night cooking up a storm like a mad woman. One project was a simple one, it was to make Glutino’s Double Chocolate Brownies. The box is what spoke to me:

Cooking therapy in a box? Okay! I’m sold, let’s do this.

So, while playing around with some stove top cooking I popped these bad boys in the oven, sans the optional nuts. Did they live up to my therapeutic needs? Almost entirety! They were moist and delicious, and hit the need for cooking therapy with a double dose of chocolate therapy. The chocolate chips added gooey chocolatey goodness to the brownies, which you can’t go wrong with. I can honestly say that the one down fall to these is that there just wasn’t enough. I ate almost half the brownies in one sitting, and they were finished up by the end of the day. I blame this on one thing: gluten free brownies just don’t rise as well as regular brownies. I’ve found this with every brand I try, they are thin and simply not as full and fluffy.


While Glutino cannot escape the thin-ness of gluten free brownies, they make up for it in taste and texture and come out towards the top of my list for gluten free pre-packaged baking mixes.
